SHG (Strictly High Grown) specifies that the coffee was grown at an altitude greater than 1400 meters. Coffee grown at a higher altitude and lower temperature produces a slower maturing fruit and a denser bean; which creates a more desirable specialty cup; this classification is higher than HG.
EP (European Preparation) specifies that the raw beans are all hand sorted to remove any defective beans and foreign material.
Our Azúcar Cítrica Single-Origin Organic Estate Coffee is sourced from a family-owned farm located in the community of El Dorado in municipality of Santa Barbara within the department of Santa Barbara, Honduras. The owner of the farm, Pedro Sagastume, owns and manages a 25 acre farm called Los Quetzales, named after the quetzal birds that visit the farm. Pedro bought the land thirty years ago and decided to plant coffee. Now Pedro’s adult children are continuing their father's legacy with a focus on quality. Two years ago the family started producing specialty coffee using their own micro-mill to process harvested cherries, which allows for meticulous care in de-pulping, fermenting, and drying the coffee. Pedro and his family love what they do, and each bean shipped to us reflects that.
Due to being grown at a near mile high altitude, our Organic Azúcar Cítrica Estate Coffee boasts a sweet and citrus body of flavor accompanied by just a hint of black pepper. With the perfect combination of sweet contrasted by spice, this premium bean creates a harmonious infusion of Honduran flavors in every sip.
